A digestive bitters blend made with damiana.
- 1 quart jar
- 1 cup dried damiana
- peel of 1 orange
- 1 tbsp dried angelica root
- 1 tsp cinnamon chips (or 1/4 teaspoon powdered cinnamon)
- 1 tsp dried ginger (or 1/2 inch chopped fresh ginger)
- 1 tbsp vanilla extract
- vodka (to fill jar, probably about 3 cups)
- 2 cups sugar (for using in 3 weeks)
Place all the dry ingredients but the sugar in the jar, then fill up with vodka. Label and set somewhere cool and dark for 3-4 weeks.
In 3-4 weeks, place a sieve over a bowl, and strain out the liquid. Set the liquid aside in a large jar, and place all the plant matter into a saucepan.
Add the sugar, and 2 cups of water. Bring to a boil, then turn the heat off, cover it, and leave to sit for an hour. Then taste it. Is it bitter? Sweet? Aromatic? If so, cool. Now here's the fun part. Strain out this syrup, and add about a quarter of it to the tincture. Taste the whole thing. Is it sweet enough? If not, add more. Keep adding syrup until you reach a desired balance of sweet/ aromatic/ bitter.
Then pour the whole lot into a bottle, label it, and drink a little before meals (you can pour into a glass and drink like that, or pour into a glass and add sparkling water).
